Fish-Kalia

Fish-Kalia is very much a Bengali dish. In Bengali it is called মাছের কালিয়া. The following quantity will be good for two adults.

 
Ingredients:
 
  1. Rohu fish:                        2 pices
  2. Potatoes:                        1 (small sized)
  3. Mustard oil:                     3/4 cup
  4. Cumin seeds (whole):     1/4 tsp
  5. Bay leaf:                          1 no.
  6. Garlic:                              2 cloves
  7. Onions (finely chopped): 2 nos.
  8. Ginger (paste):               1 tbs          
  9. Garlic (finely chopped):   1.5 tbs
  10. Cariander powder:         1/2 tsp
  11. Turmeric powder:           1 tsp 
  12. Coriander powder:        1/2 tsp
  13. Cumin powder:              1/2 tsp
  14. Red chili powder:           1/2 tsp
  15. Tomatoes (small):          1/2 
  16. Cardamoms (small):       3 to 4 numbers
  17. Cinnamon:                     1.5 inch
  18. Cloves:                          3 to 4 numbers
  19. Ghee:                            1/2 tsp
  20. Salt:                              To taste                    
Preparation for cooking:
  1. Wash the fish till clean and dry those by pressing the pieces between kitchen towel.
  2. Apply turmeric powder (1/4 tsp) and salt (a pinch) to the fish pieces and keep aside.
  3. De-skin the potato, and cut them length wise to 4 pieces.
  4. Finely chop the onion and garlic.
Cooking steps:
  1. Heat the oil in a cooking pan on high flame, till the oil smokes.
  2. Fry the fish pieces,till all the sides of the fish are evenly fried to reddish colour.
  3. Take out the fish and keep in a bowl.
  4. Fry the potatos in the same oil till thr colour turns golden brown. Remove the potatos from oil and keep with the fried fish.
  5. Lower the flame and add whole garam masala, whole cumoin seeds, bay leaf and saute toill aroma of the fried spices come out.
  6. Keep the flame low, add chopped garlic, chopped onion and fry till the onion changes to pink colour.
  7. Add turmeric powder, coriander powder, cumin powder, red chili powder and a tsp of water; fry lightlyon low flame for 1 min.
  8. Add chopped tomatos and fry till they become tender.
  9. Add ginger paste and continue frying for 2 mins till the oil leaves the sides of the mixture.
  10. Add fried fish, potato and 1/2 cup of warm water.
  11. Add salt.
  12. Place the mixture in a pressure cooker and cook for 5 mins.
  13. Let the cpooker cool by self.
  14. The fish-kalia is ready. Take out the fish-kalia. Add ghee.
  15. Garnish with whole green chili and serve hot with steamed rice.
