Bhaat (Rice) and Dal

 

Ingredients:
  1. Basmait rice 2 cups
  2. Water 3 lts
Procedure:
  1. Soak rice grains for about 30 minutes in cold water.
  2. Boil 3 lts of water in a pot or sauce-pan.
  3. Add rice grains in boiling water.
  4. Wait till rice and water starts boiling, then lower the heat.
  5. Cook for about 10-12 minutes or till the rice is done.
  6. Drain excess water by pouring the whole mixture in colander.
  7. Wait for 5 minutes, till all the water has been drained out. 
  8. Pour the boiled rice in a serving bowl.
Tips:
 
You may add 2 tps of veg oil in the water for cooking rice so that the rice grains get separated.
 
 
Preparation of Dal
 
Ingredients:
  1. Yellow Dal (Chana) 1 cup
  2. Cumin seeds 1 tsp
  3. Red chili whole 1 No
  4. Bay leaf 1 No
  5. Turmeric powder ½ tsp
  6. Green chili 2 Nos
  7. Veg oil 1 ½ tbs
  8. Salt 
  9. Sugar ½ tsp
  10. Water 2 cups
Procedure:
  1. Soak the Dal for about 15-20 minutes.
  2. Boil the water in a pressure cooker (or sauce-pan).
  3. Add ½ tsp of cooking oil, pinch of salt, turmeric powder.
  4. Add Dal and cook for 10 minutes in the pressure cooker (or 30 minutes in a sauce-pan).
  5. Heat rest of the oil in a wok.
  6. Lower heat, add cumin seeds, whole red chili and the bay leaf – fry till aroma comes out.
  7. Add the cooked Dal to the spices.
  8. Simmer for 2 minutes. 
  9. Add more salt if needed. 
  10. Add sugar.
  11. Stir and cook for 2-3 minutes. 
  12. Pour in a serving bowl.
  13. Decorate with whole green chili.
Tips:
  1. If you use sauce-pan for boiling the Dal, you will need 4 cups of water instead of 2 cups.
  2. Arhar dal can be cooked similarly, but it will take less time to cook.
  3. You may add chopped fresh coriander leaves for decoratation.
