Moong Dal

 
Bhaja Moong Dal is a simple fried dal preparation, which goes very well with steamed rice, and any vegetarian and non-vegetarian dish.
 
Ingredients (to serve 4):
  1. Moong dal (small grain): 1 cup
  2. Haldi (turmeric) powder: 1 tsp
  3. Salt: ¾ tsp
  4. Whole cumind seed: ½ tsp
  5. Vegetable oil: 2 tsp
  6. Ghee: ½ tsp
  7. Sugar: ½ tsp
  8. Green chili (whole): 2 numbers
Procedure:
  1. Take 2 cups of water in pressure cooker and bring it to boil.
  2. Add ½ tsp of oil and salt.
  3. Roast moong dal till it turns light brown.
  4. Wash the dal and slowly add it to the boiled water in pressure cooker.
  5. Pressure cook on low flame for 5 minutes, turn off the gas.
  6. Take out the dal after the steam has released.
  7. Heat rest of the oil in a wok.
  8. Add whole cumin seeds and bay leaf to the smoking oil, fry till aroma of fried cumin seeds come out.
  9. Lower flame, add boiled dal and boiled water to keep consistency to your desire.
  10. Stir constantly for a minute on low flame.
  11. Add sugar and ghee.
  12. Turn off the flame.
  13. Garnish with green chili and serve it with hot steamed rice.
Cook's tips:
  1. After cooking never boil the dal on high flame, which forms scum on the surface.
  2. You can use mastered oil instead of vegetable oil as cooking medium.
  3. Serve this dal with some aromatic lemons (I mean Gandharaj lebu) and potato chips.
